Gongfu is the same word used for martial practice. It means skill that only arrives through repetition, and it is an honest name for a way of making tea.
High leaf ratio, water just off the boil, infusions counted in seconds, and the pot emptied completely each time. There is no timer involved after the first few weeks — you learn it by the colour and the smell.
Warm everything through first. Rinse the leaves and pour that away. Then brew, pour out entirely, and repeat. If the cup tastes thin, add a couple of seconds; if it tightens at the back of the throat, take a couple away.
Use the same tea for a week. Varying the leaf every session means you are always adjusting to a new variable and never learning the method.
Hot water only. Never detergent or dishwasher. Air dry with the lid off.
